Ginger, Orange & Pumpkin Cake

This spiced ginger, orange and pumpkin tray-bake was just what I fancied to warm up, and it has some delicious chewy ginger pieces inside. Ginger is one of my favourite ingredients due to its flavour and versatility, but interestingly it is known to be beneficial to digestion, immunity and even arthritis (we’ll just ignore the butter and sugar part).

Ingredients:
120g butter
120g Demerara sugar
3 free-range eggs, beaten
juice & zest of 1 orange
zest of 1 lemon
2 tbsp pumpkin ‘purée’ (http://www.bbcgoodfood.com/recipes/872635/pumpkin-puree you want to be using the whiter flesh, in the same way you would eat a melon)
50g stem ginger in syrup, finely chopped, plus a little extra for later
180g self-raising flour, plus a little extra
1 tsp baking powder
5 tsp ground ginger

Icing:
5 tbsp icing sugar
2 tsp ground ginger
1-2 tbsp orange juice/water
